I have to admit that I have a new favorite snack! But, its guilt free so I’m not feeling too bad about it! I’ve been making my own sweet potato and beet chips and they are soooo good! You have to try them out!
You’ll need a mandoline, sweet potatoes, beets, olive oil cooking spray, and salt.
1. Slice the veggies thin.
2. Spray a cookie sheet with olive oil and then layer one or the other in a single layer.
3. Spray the tops of the veggies with the cooking spray and sprinkle with salt.
4. Bake at 350 for 10 minutes.
5. Flip and then bake for another 10!
If they don’t crisp right up they may need a few extra minutes. I often find by the next day they are a little soggy, so, I bake them again, all together, at 200 for about 20 minutes or until they feel crispy!
Stored in an air tight container they last quite a few days! Thats if you don’t eat them all right away!
You can also do the same for zucchini chips- Placed on parchment paper at 200 for 2 hours! I like those sprinkled with salt and pepper!
